I learned the griddle before I learned the oven. On a ship I will not name, breakfast is the only service where people stop performing. They order the eggs they think they should want, leave the fruit, and the next morning they ask for the pancakes again. I file guests by that second order. It is the only review that has ever been useful to me.

These are those pancakes. Buttermilk for the tang, melted butter in the batter so the edges lace instead of steaming into a mat, and sugar treated as a tool. Two tablespoons. More than that and the bottoms scorch before the middle sets. Less and you have baked a sponge and called it breakfast. I have no interest in either.

I have made them at five in the morning with a line already at the rail and a steward who thought syrup could fix a bad flip. It cannot. If you make these once, you will call them fine. Make them a second time. That is when you stop turning them early.

Ingredients

  • 2 cups (240 g)all-purpose flour
  • 2 tablespoonsgranulated sugar
  • 2 teaspoonsbaking powder
  • 1/2 teaspoonbaking soda
  • 3/4 teaspoonfine salt
  • 2 cups (480 ml)buttermilk, cold
  • 2 largeeggs
  • 3 tablespoonsunsalted butter, melted and cooled slightly
  • 1 teaspoonvanilla extract
  • for the griddleunsalted butter

Method

  1. Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl.
  2. In a second bowl, whisk the buttermilk, eggs, melted butter, and vanilla until smooth.
  3. Pour the wet mixture into the dry and stir just until no dry flour remains. Leave the lumps. Do not beat the batter.
  4. Rest the batter for 5 minutes. Heat a griddle or heavy skillet over medium heat and film it lightly with butter.
  5. Pour a scant 1/4 cup of batter for each pancake, leaving space between them. Cook until the edges look set and the bubbles across the surface have mostly popped, about 2 minutes.
  6. Flip once. Cook until the underside is evenly golden and the center springs back when pressed, 1 to 2 minutes more.
  7. Repeat with the remaining batter, wiping the griddle and adding a little butter between batches. Hold finished pancakes on a warm plate.

They will hold under a clean towel for about an hour if the table is slow, but they are meant to be eaten as they leave the pan. Butter, maple that actually tastes like maple, and ripe berries on the side rather than stirred in, where they leak and burn. Coffee beside them. Juice is what people order while they are still pretending.
