On the boat I fed a watch that had not seen a skillet in eleven days, and the only heat I trusted was a box that blew air like a disciplined wind. Grilled cheese was the treaty: bread that stayed a wall, cheese that surrendered on schedule. I still time it the way I timed that watch, because a late flip is how you lose a crew to burnt crust and cold centers.
The boast, if you need one, is that the same sandwich went down a hatch in the Barents and came back empty plates. Nobody can check that. What you can check is the clock and the color. Butter is the enlisted man; cheese is the officer. Do not let the officer run the show until the crust has reported in.
I keep a spatula I still call Sergeant because it only flips when ordered. You do not need the rank. You need the minutes.
Ingredients
Method
Heat the air fryer to 370°F (188°C) for 3 minutes.
Spread the butter evenly on one side of each bread slice.
If using mustard, spread a thin layer on the unbuttered side of two slices.
Lay those two slices butter-side down and cover with the cheddar, edge to edge.
Top with the remaining slices, butter-side up, and press gently so the stack is even.
Place both sandwiches in the basket in a single layer without overlapping.
Air-fry for 4 minutes, then flip with a thin spatula.
Air-fry 3 to 4 minutes more, until the crust is deep golden and the cheese is fully melted.
Rest 1 minute on a rack, then cut in half and serve at once.
It does not keep. The crust goes soft in twenty minutes, which is why we ate standing up. Tomato soup is the only escort I allow; pickles if someone argues. A cold beer is not regulation, but I have never written that man up.
